ADR-0108: Opik instead of Langfuse

Context

Langfuse is MIT AND LicenseRef-Langfuse-EE, outside the ADR-0101 policy.

Decision

AI traces go to Opik (Apache-2.0); Langfuse carries replacement: opik and is removed from the ApplicationSet and compose.

Consequences

The Langfuse host catalogue entry remains until removed.
